  • 1 roast 1 prime rib roast (about 5-7 pounds)
  • 2 tablespoons 2 tablespoons kosher salt
  • 1 tablespoon 1 tablespoon black pepper
  • 2 tablespoons 2 tablespoons garlic powder
  • 2 tablespoons 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons 2 tablespoons olive oil
  • 1 tablespoon 1 tablespoon Dijon mustard

Preparation

  • Preheat your oven to 450°F (232°C).
  • In a small bowl, mix together the salt, pepper, garlic powder, rosemary, olive oil, and Dijon mustard to create a paste.
  • Rub this mixture all over the prime rib roast.

Cooking

  • Place the roast in a roasting pan, bone side down, and roast in the preheated oven for 20 minutes.
  • Reduce the oven temperature to 325°F (163°C) and continue roasting for about 15-20 minutes per pound, or until the internal temperature reaches 130°F (54°C) for medium-rare.
  • Remove the roast from the oven and let it rest for at least 20 minutes before slicing.

Notes

Let the prime rib sit at room temperature for about an hour before cooking for even cooking. Use a meat thermometer to check internal temperature, and allow the meat to rest after cooking for better flavor. Store leftovers tightly wrapped in plastic wrap or aluminum foil in the refrigerator for up to 3-4 days, or freeze for up to 3 months.
