  • 4 pieces chicken breasts (fresh, boneless, skinless) Can substitute with thighs if preferred.
  • 1 cup chicken broth (low sodium recommended)
  • 1 cup heavy cream Essential for the creamy sauce; half-and-half can be substituted but will be less rich.
  • 1/2 cup Parmesan cheese (grated)
  • 4 cloves garlic (minced)
  • 1 tsp oregano (dried)
  • 1 tsp thyme (dried)
  • 1/2 tsp red pepper flakes (to taste)
  • 1/4 cup sun-dried tomatoes (chopped) Can substitute with roasted red peppers.
  • 2 tbsp butter (for enriching the sauce)
  • to taste Fresh basil or parsley (for garnish)

Instructions
 

Preparation

  • Pat chicken dry and season generously with salt and pepper on both sides.
  • In a medium bowl, whisk together chicken broth, heavy cream, Parmesan cheese, garlic, oregano, thyme, and red pepper flakes until smooth.
  • Place the seasoned chicken breasts in the bottom of the slow cooker and pour the cream mixture evenly over the chicken.
  • Scatter sun-dried tomatoes over the top.

Cooking

  • Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours.
  • 30 minutes before serving, stir in the butter to enrich and thicken the sauce.

Serving

  • Once done, sprinkle fresh basil or parsley over the top and serve warm with rice, mashed potatoes, pasta, or crusty bread.

Notes

Ensure chicken is fully thawed for even cooking. Use a meat thermometer to check doneness; chicken should reach 165°F.
