Crust
- 1 1/2 cups graham cracker crumbs
- 1/3 cup unsalted butter, melted
Cheesecake Filling
- 24 oz cream cheese, softened 3 blocks
- 3/4 cup granulated sugar
- 1/2 cup brown sugar
- 3 large eggs
- 1/2 cup sour cream
- 1 tsp vanilla extract
Apple Layer
- 2 cups diced apples Granny Smith or Honeycrisp
- 1 tsp cinnamon
- 1 tbsp butter for sautéing
Crumble Topping
- 3/4 cup flour
- 6 tbsp cold butter, cubed
- 1/4 cup brown sugar
- 1/3 cup rolled oats optional
Preheat oven to 350°F (175°C). Combine graham cracker crumbs and melted butter. Press into a 9-inch springform pan. Bake for 8 minutes and cool completely.
Reduce oven to 325°F (160°C). Beat cream cheese, sugars, and vanilla until smooth. Add eggs one at a time, then sour cream. Pour over crust.
In a skillet, melt butter and sauté diced apples with cinnamon and brown sugar for 3–4 minutes until tender. Spread evenly over batter.
In a bowl, combine flour, oats, brown sugar, and cold butter until crumbly. Sprinkle half over the apples.
Bake 55–65 minutes, until center is just set. Cool gradually in the oven with door ajar to prevent cracks.
