Ingredients
  

  • 2 pounds beef stew meat cut into cubes
  • 4 cups beef broth
  • 2 tablespoons vegetable oil
  • 1 large onion diced
  • 3 carrots sliced
  • 3 potatoes diced
  • 2 cloves garlic minced
  • 1 tablespoon tomato paste
  • 2 teaspoons dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • In a large pot, heat the vegetable oil over medium heat. Add the diced onions and garlic, cooking until softened.
  • Add the beef stew meat to the pot, browning it on all sides.
  • Stir in the tomato paste, thyme, paprika, salt, and pepper.
  • Pour in the beef broth and bring to a boil.
  • Add the carrots and potatoes, then reduce heat to low and cover.
  • Simmer for about 120 minutes, or until the beef is tender.
  • Adjust seasoning as necessary and serve hot, garnished with fresh parsley.
