  • 2 cups cooked, shredded chicken Feel free to substitute with shredded turkey.
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup chicken broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1-2 pieces jalapeños, diced (optional, for heat)
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • to taste Salt and pepper
  • 1 cup Greek yogurt or sour cream For creaminess.
  • Fresh cilantro for garnish Add just before serving.

Cooking Instructions

  • In a large pot, sauté the diced onions and minced garlic over medium heat until they become translucent.
  • Add the shredded chicken, rinsed white beans, undrained diced tomatoes, chicken broth, diced jalapeños, cumin, chili powder, salt, and pepper. Stir to combine.
  • Bring the mixture to a boil, then reduce heat and let it simmer for about 20 minutes, allowing the flavors to meld.
  • Stir in the Greek yogurt or sour cream until everything is well combined and creamy.
  • Serve hot, garnished with fresh cilantro.

Notes

For extra flavor, consider roasting jalapeños before dicing. Store leftovers in an airtight container for up to 3-4 days, or freeze in portions.
