Ingredients
  

  • 1 lb ground beef (80/20)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp taco seasoning (sugar-free)
  • 4 oz cream cheese
  • 1/2 cup heavy cream or sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Mexican blend cheese
  • 1 cup diced tomatoes (drained)
  • jalapeños (optional)
  • chopped cilantro or green onions, for garnish

Instructions
 

  • Preheat oven to 375°F (190°C) and grease a 9x13" baking dish.
  • In a skillet, heat olive oil and sauté onion and garlic until fragrant.
  • Add ground beef and cook until browned. Drain excess fat.
  • Stir in taco seasoning and diced tomatoes. Simmer 2–3 minutes.
  • Mix in cream cheese and heavy cream until smooth and creamy.
  • Transfer mixture to casserole dish, top with cheddar and Mexican blend cheeses.
  • Bake uncovered for 12–15 minutes until cheese is bubbly and golden. Garnish before serving.

Notes

Customize with jalapeños, black olives, or crushed pork rinds for crunch. Great for meal prep and low-carb potlucks!
