Ingredients
  

For the chicken and corn

  • 4 pieces boneless, skinless chicken thighs Can use frozen, ensure fully thawed before marinating.
  • 1 tbsp freshly squeezed lime juice For marinating the chicken.
  • 1 tbsp avocado oil For cooking and marinating.
  • 1 tsp chili powder Adjust to taste.
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder Or 2 cloves garlic, minced.
  • 1/2 tsp salt Adjust as needed.
  • 1/4 tsp ground black pepper
  • 1 cup sweet corn kernels Grilled or sautéed from frozen.
  • 1/4 cup sliced red onion
  • 3 cups prepared rice For serving base.

For the dressing

  • 1/2 cup sour cream Separated for serving.
  • 2 tbsp mayonnaise
  • 1/2 cup crumbled cotija cheese Extra for topping.
  • 1 tbsp lime juice To taste.

For garnish

  • Fresh cilantro leaves For garnish.
  • Lime wedges From 1 lime.
  • Reserved sour cream and cotija cheese For garnish.

Instructions
 

Preparation

  • In a bowl, combine the chicken thighs with lime juice, avocado oil, chili powder, cumin, garlic (or garlic powder), salt, and pepper. Let this marinate for at least 30 minutes for flavor to develop.

Cooking

  • Preheat a grill or skillet over medium-high heat. Cook the marinated chicken thighs for about 6-7 minutes on each side or until they reach an internal temperature of 165°F (75°C). Remove the chicken and let it rest for a few minutes before slicing.
  • In the same skillet, add the sweet corn and sauté for about 3-4 minutes until it's heated through and has slight char marks if grilled.

Dressing

  • In a small bowl, combine the sour cream, mayonnaise, crumbled cotija cheese, lime juice, and additional chili powder. Mix well and season with salt and pepper, to taste.

Assembly

  • Start with a base of prepared rice, then layer the sliced chicken, corn, and red onion. Top with a generous dollop of the dressing and garnish with fresh cilantro leaves and lime wedges. Add extra cotija cheese if desired.

Notes

Serve in colorful bowls to showcase the layers. A side of crunchy tortilla chips or avocado salad can elevate the meal.
