Sweet Potato Turkey Chili

A healthy and easy crockpot turkey chili with sweet potatoes and warming fall spices. Bean-free and perfect for clean eating and fall dinners.

Ingredients
  

  • 1 lb lean ground turkey
  • 2 medium sweet potatoes, peeled and cubed
  • 2 large carrots, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can 14oz diced tomatoes
  • 1 can 6oz tomato paste
  • 2 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • 2 tbsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 0.5 tsp cayenne pepper, optional
  • to taste salt and pepper
  • for garnish fresh cilantro and lime wedges

Instructions
 

  • Heat olive oil in a pan and brown ground turkey with garlic and onion. Transfer to crockpot.
  • Add sweet potatoes, carrots, diced tomatoes, tomato paste, chicken broth, and spices to crockpot.
  • Cook on low for 6-8 hours or high for 3-4 hours until vegetables are tender.
  • Season with salt and pepper. Serve garnished with fresh cilantro and lime wedges.

Notes

Great for meal prep and freezes well. Adjust spice level to taste. Add bell peppers or zucchini for extra veggies.
