Preparation

  • In a medium bowl, whisk together the sweet chili sauce, soy sauce, rice vinegar, olive oil, minced garlic, and minced ginger until smooth and glossy. Taste and adjust with a pinch of salt and pepper if needed.
  • Place your chicken (breasts, thighs, or cut pieces) into a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, pressing out extra air before sealing the bag or covering the dish.
  • Refrigerate the chicken for at least 30 minutes, or up to overnight for deeper flavor and tenderness. For thicker pieces like bone-in thighs, aim for 4–8 hours.

Cooking

  • Remove chicken from the marinade and cook by grilling, baking, or stir-frying. For grilling, brush on extra marinade near the end for a caramelized glaze.

Notes

Store cooked chicken in an airtight container in the refrigerator for 3–4 days. To freeze, place in a freezer-safe container and remove as much air as possible.
