Ingredients
  

For the strawberry filling

  • 4 cups fresh strawberries, hulled and sliced Look for ripe, organic strawberries if possible.
  • 1/2 cup granulated sugar Used to macerate strawberries.

For the batter

  • 1 cup granulated sugar Divided into two 1/2 cup portions.
  • 1 cup all-purpose flour
  • 1.5 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup whole milk Can substitute with almond milk for dairy-free.
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 4 ounces cream cheese, cubed Use block cream cheese for better texture.

Preparation

  • Preheat your oven to 350°F (175°C) to ensure everything bakes evenly.
  • In a large mixing bowl, combine the sliced strawberries with half of the granulated sugar (½ cup). Allow them to sit for 10 minutes to enhance their sweetness.
  • In another bowl, whisk together the all-purpose flour, baking powder, salt, the remaining sugar (½ cup), milk, melted butter, and vanilla extract until smooth.

Combine and Bake

  • Pour the prepared batter evenly into a greased baking dish.
  • Arrange the macerated strawberries evenly over the batter, then dot the top with the cubed cream cheese pieces.
  • Place the baking dish in the preheated oven and bake for 45 minutes or until it’s golden brown on top.

Cooling and Serving

  • Let the cobbler cool slightly before serving to help it set.
  • Serve warm, ideally with a scoop of ice cream or whipped cream.

Notes

For the best flavor, use fresh strawberries. If you're short on time, prep ahead and store it in the fridge before baking. It can be stored in the refrigerator for 3 days or frozen for longer storage.
