Spicy Cajun Chicken with Creamy Orzo

Ingredients
  

  • 1 lb boneless skinless chicken breasts or thighs, cubed
  • 1 cup orzo pasta
  • 2 tbsp olive oil
  • 1 tbsp Cajun seasoning
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1.5 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 0.5 cup Parmesan cheese, grated
  • 1 red bell pepper, diced
  • 1 cup baby spinach
  • to taste salt and pepper
  • to garnish fresh parsley or green onions

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat. Season chicken cubes with Cajun seasoning.
  • Cook chicken until browned and cooked through. Remove and set aside.
  • Add onions, garlic, and red bell pepper to skillet. Cook until softened.
  • Stir in orzo and toast for 1-2 minutes.
  • Add chicken broth and bring to a simmer. Cover and cook until orzo is tender and most liquid absorbed.
  • Reduce heat, stir in cream and Parmesan cheese. Return chicken to skillet with baby spinach.
  • Cook until spinach wilts and sauce thickens. Season to taste.
  • Garnish with parsley or green onions and serve hot.

Notes

Substitute shrimp or sausage for chicken. Use light cream or coconut milk for dairy-free options. Add extra chili flakes for more heat.
