Ingredients
  

  • 1 deep-dish pie crust store-bought or homemade
  • 3-4 large ripe tomatoes sliced
  • A handful of fresh basil leaves
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup mayonnaise
  • 1/2 small onion thinly sliced
  • Salt and black pepper to taste

Instructions
 

  • Prep the tomatoes by layering them on paper towels, sprinkling with salt, and letting them drain for 15-20 minutes.
  • Blind bake the pie crust at 350°F for about 10 minutes until slightly golden.
  • After the crust cools, layer the tomato slices, basil, and onion if desired.
  • In a separate bowl, mix together the cheese and mayonnaise to create a spread.
  • Spread the cheese mixture over the tomatoes and bake at 350°F until golden and bubbly, about 30-40 minutes.
  • Let the pie cool for a few minutes before slicing and serving.

Notes

Serve warm with a green salad and a drink of choice. Good for up to 3 days in the fridge, although it may become soggy.
