Preparation

  • Season the prime rib roast generously with salt and pepper.
  • In a skillet, heat olive oil over medium-high heat. Sear the roast on all sides until browned.
  • Place the roast in the slow cooker. Add minced garlic, beef broth, Worcestershire sauce, and herbs if using.

Cooking

  • Cook on low for 6-8 hours or until the meat reaches your desired doneness.
  • For the horseradish sauce, mix sour cream, horseradish, Dijon mustard, and salt together until well combined.
  • Serve the prime rib sliced with creamy horseradish sauce on the side.

Notes

Use a meat thermometer to check the doneness for the perfect cook. Aim for about 130°F for medium-rare. Allow the meat to rest for about 15 minutes after cooking. For added flavor, consider marinating the roast overnight with your favorite herbs and spices.
