  • 2–3 pounds Chicken thighs Bone-in, skin-on for the best flavor; boneless skinless also works.
  • 1/2 to 3/4 cup Honey Use a mild, runny honey for balanced sweetness.
  • 4–6 cloves Fresh garlic, minced Mince finely for even distribution.
  • 1/3 to 1/2 cup Soy sauce Use low-sodium soy for salt control; tamari for gluten-free.
  • 1–2 teaspoons Fresh ginger, grated or minced Fresh ginger is recommended for brightness.
  • Salt To taste.
  • Freshly ground black pepper To taste.

Preparation

  • Place the chicken thighs in a single layer at the bottom of the slow cooker, leaving space between pieces.
  • In a medium bowl, mix honey, minced garlic, soy sauce, grated ginger, salt, and black pepper until well combined. Taste for balance.
  • Pour the honey-garlic mixture over the chicken, ensuring even coating.

Cooking

  • Coverage and cooking: Cover and slow cook on low for 6–8 hours or on high for 3–4 hours until tender.
  • Check that the chicken easily flakes with a fork and that the internal temperature reaches 165°F (74°C).
  • For a caramelized finish, transfer thighs to a broiler-safe sheet and broil for 3–5 minutes.

Serving

  • Serve over rice or vegetables, garnished with green onions or sesame seeds.

Notes

Use consistent-size thighs for even cooking. Brown thighs for deeper flavor if desired. Leftovers improve in flavor.
