Ingredients
  

  • 1 lb boneless chicken breast, cubed
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup pineapple chunks
  • 2 tbsp vegetable or avocado oil
  • 3 cloves garlic, minced
  • 2 tsp fresh cracked black pepper
  • 1 tbsp low-sodium soy sauce
  • 1 tbsp oyster sauce
  • 2 tsp cornstarch
  • 0.5 cup chicken broth or water
  • to taste salt
  • Chopped scallions or cilantro for garnish

Instructions
 

  • Prepare all vegetables and chicken. Cut chicken into cubes, slice peppers, and chop pineapple if using fresh.
  • Heat 1 tbsp oil in a large skillet over medium-high. Cook chicken until golden and cooked through, about 5 minutes. Remove and set aside.
  • Add remaining oil, then peppers and garlic. Stir-fry 2-3 minutes until just tender.
  • Return chicken to pan with pineapple. In a small bowl, mix soy sauce, oyster sauce, cornstarch, broth, and black pepper. Pour into pan and stir to coat.
  • Simmer until sauce thickens and chicken is heated through, 2-3 minutes. Adjust seasoning, garnish, and serve.

Notes

Try with tofu or shrimp, or serve cold over salad or pasta. Great for meal prep and healthy dinner bowls.
