Ingredients
  

  • - 4 medium sweet potatoes peeled and cubed
  • - 3 tbsp olive oil or melted coconut oil
  • - 3 tbsp honey or maple syrup
  • - 1 ½ tsp ground cinnamon
  • - ½ tsp smoked paprika optional
  • - Salt and black pepper to taste
  • - Fresh parsley chopped (for garnish)

Instructions
 

  • 1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • 2. In a bowl, whisk olive oil, honey, cinnamon, paprika, salt, and pepper.
  • 3. Toss sweet potato cubes in the mixture until evenly coated.
  • 4. Spread on baking sheet in a single layer and roast 25–30 minutes, flipping halfway.
  • 5. Roast until caramelized and golden brown. Garnish with fresh parsley before serving.

Notes

For a vegan version, substitute honey with maple syrup. Add chopped pecans for extra crunch.
