Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Rub olive oil, salt, and pepper onto the chicken breasts.
  • Add lemon zest and dried herbs under the skin.
  • Stuff garlic cloves under the skin if desired.
  • Place the chicken on a rimmed sheet pan.
  • Roast in the oven for 30-40 minutes, or until the thickest part reaches 165°F (75°C).
  • Let the chicken rest for 8-10 minutes before slicing.
