Ingredients
  

  • 2 cups rotisserie chicken shredded
  • 2 medium zucchinis sliced
  • 1 cup shredded cheese cheddar or mozzarella
  • 1 cup cooked rice
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1 can cream of chicken soup
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine the shredded rotisserie chicken, sliced zucchini, cooked rice, diced onion, diced bell pepper, cream of chicken soup, garlic powder, salt, and pepper. Mix well until all ingredients are evenly combined.
  • Transfer the mixture to a greased 9x13 inch baking dish.
  • Sprinkle the shredded cheese on top of the casserole.
  • Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving.

Notes

Feel free to add other veggies like spinach or mushrooms. Experiment with different types of cheese or add diced jalapeños for spice.
