Ingredients
  

For the stuffing

  • 1 cup chopped spinach Fresh spinach for best flavor
  • 1 cup finely chopped mushrooms
  • 1/2 cup breadcrumbs
  • 1/4 cup softened cream cheese
  • 2 cloves minced garlic
  • to taste salt and pepper
  • as needed olive oil for cooking
  • as needed fresh herbs (such as thyme or rosemary) for seasoning

For the beef

  • 1 piece beef tenderloin

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  • Add mushrooms and spinach, cooking until the spinach is wilted.
  • Mix in breadcrumbs and cream cheese until well combined. Season with salt, pepper, and fresh herbs.
  • Cut a pocket into the beef tenderloin and stuff it with the mixture.

Searing and Baking

  • Sear the tenderloin in a hot skillet on all sides until browned.
  • Transfer to the oven and bake for about 25-30 minutes, or until desired doneness.
  • Let rest before slicing and serving.

Notes

Make sure to let the beef rest after baking to keep it juicy. Feel free to experiment with different herbs and seasonings.
