  • 1 loaf loaf of bread (such as French or brioche) For a richer flavor, choose brioche or challah bread.
  • 6 large eggs large eggs
  • 2 cups milk You can use almond milk or oat milk for a dairy-free option.
  • 1 cup canned pumpkin puree Increase the amount slightly for a stronger pumpkin flavor.
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon salt
  • 1/4 cup butter (melted) Can be substituted with a plant-based butter alternative.
  • to taste Maple syrup (for serving) Serve warm with a drizzle of maple syrup, whipped cream, or powdered sugar if desired.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  • Cut the bread into cubes and place half of them in the prepared baking dish.
  • In a large bowl, whisk together the eggs, milk, pumpkin puree, sugar, vanilla extract, pumpkin pie spice, and salt until well combined.
  • Pour half of the mixture over the bread cubes in the dish. Layer the remaining bread cubes on top and pour the remaining mixture over.
  • Drizzle the melted butter over the top.
  • Let it sit for at least 30 minutes, or overnight in the fridge if possible.

Baking

  • Bake for 45-50 minutes, or until the casserole is set and golden brown.

Notes

After serving, allow any leftovers to cool. Store the casserole in an airtight container in the refrigerator for up to 3 days. You can reheat it in the oven or microwave before serving again. Consider soaking the bread overnight for a firmer texture.
