Ingredients
  

  • 6 pieces bone-in skin-on chicken thighs
  • 4 cloves garlic, minced
  • 3 tbsp olive oil
  • 1 tbsp dried oregano
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 0.5 tsp crushed red pepper flakes
  • 1 tbsp red wine vinegar
  • 3 tbsp fresh lime juice
  • 3 tbsp fresh orange juice
  • to taste salt and pepper
  • to garnish fresh cilantro or parsley

Instructions
 

  • Combine garlic, olive oil, oregano, cumin, paprika, red pepper flakes, vinegar, lime juice, and orange juice to make marinade.
  • Marinate chicken thighs at least 1 hour or overnight.
  • Preheat oven to 375°F (190°C). Arrange chicken on baking sheet skin side up.
  • Bake uncovered 40-50 minutes until crisp and cooked through, basting occasionally.
  • Garnish with fresh herbs before serving.

Notes

Best served with Puerto Rican rice and beans, or mofongo. Marinating longer enhances flavor.
