Ingredients
  

For the rub

  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 teaspoons rosemary, chopped
  • 2 teaspoons oregano, chopped
  • 2 teaspoons thyme, chopped
  • 4 cloves garlic, minced

  • 1 boneless prime rib roast

Preparation

  • Preheat your oven to 450°F (232°C).
  • In a small bowl, mix together the olive oil, salt, black pepper, rosemary, oregano, thyme, and garlic.
  • Rub the mixture all over the prime rib roast.

Cooking

  • Place the roast in a roasting pan, fat side up, and roast in the oven for 15 minutes.
  • Lower the oven temperature to 325°F (163°C) and continue roasting for approximately 1.5 to 2 hours, or until the internal temperature reaches your desired level of doneness (130°F for medium-rare).
  • Allow the roast to rest for at least 20 minutes before slicing and serving.

Notes

Use a meat thermometer to check the roast's internal temperature for perfect doneness. Let the roast rest after cooking to keep it juicy and tender. To store leftover Prime Rib Roast, let it cool completely and then wrap it tightly in plastic wrap or aluminum foil. Place it in an airtight container and store it in the refrigerator for up to 3 days. If you want to keep it longer, you can freeze the slices for up to 3 months. Just make sure to thaw it in the fridge before reheating.
