Dumplings and Broth

  • 12 oz 1 package pork or chicken dumplings Frozen dumplings work well
  • 4 cups low-sodium chicken broth Can substitute with vegetable broth for a vegetarian option
  • 1 tbsp fresh ginger, grated
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tsp sesame oil Drizzle before serving

Vegetables

  • 2 cups fresh spinach or bok choy Can customize with preferred greens
  • 2 each green onions, chopped For garnish

Preparation

  • Gather all your ingredients to streamline the cooking process.
  • In a large pot over medium heat, add a splash of oil. Sauté the minced garlic and grated ginger until fragrant, about 1 minute.
  • Pour in the chicken broth and bring it to a gentle boil.
  • Add the dumplings and cook until tender, about 5-7 minutes.
  • Stir in the fresh spinach or bok choy along with soy sauce, cooking until the greens are wilted, about 2-3 minutes.
  • Drizzle with sesame oil before serving.
  • Ladle the soup into bowls and garnish with chopped green onions.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. You can also freeze the soup for up to three months, but be aware that dumplings may lose texture.
