Ingredients
  

For the kabobs

  • 1 lb chicken breasts, cut into chunks Opt for boneless chicken breasts for quick cooking.
  • 1 cup pineapple, cut into pieces Fresh pineapple is ideal, but canned chunks work too.
  • 1/4 cup soy sauce
  • 1/4 cup honey You can substitute maple syrup for honey.
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • units skewers Soak wooden skewers in water before using.

Preparation

  • In a bowl, whisk together soy sauce, honey, minced garlic, salt, and pepper to create a flavorful marinade.
  • Add the chicken chunks to the marinade and let it sit for at least 30 minutes.
  • Soak skewers in water if you’re using wooden skewers while the chicken is marinating.
  • Prepare your grill for medium-high heat.
  • Thread alternating pieces of chicken and pineapple onto the skewers.

Grilling

  • Place the kabobs on the grill for about 10-15 minutes, turning occasionally, until the chicken is cooked through.
  • Serve hot with a side of rice or a salad.

Notes

Make sure to preheat the grill for even cooking. Use fresh pineapple for the best flavor. If short on time, consider marinating the chicken the night before for even better flavor. These kabobs are excellent for busy weeknights and easy to scale up for gatherings!
