  • 3 to 4 pounds pound roast (like a ribeye roast)
  • 1 tablespoon kosher salt
  • 1 to 2 teaspoons black pepper, crushed or ground
  • Olive oil (optional) Use if the roast is very lean
  • Herbs like rosemary or thyme (optional) For added flavor

Preparation

  • Remove the roast from the refrigerator 60 minutes before cooking to reach room temperature.
  • Preheat the oven to 325 degrees Fahrenheit.
  • If the roast is very lean, drizzle a tablespoon or two of olive oil over it.
  • Sprinkle the salt and pepper evenly over the roast.
  • Place the roast on a wire rack set on a baking sheet.

Cooking

  • Bake the roast for approximately 25 to 30 minutes for every pound of meat for a roast cooked to medium. Adjust cooking time based on desired doneness.
  • Use a meat thermometer to check the roast's internal temperature and remove it from the oven when it's about 10 degrees less than the desired doneness.

Resting

  • Let the roast rest for at least 15 minutes, tented in aluminum foil, before carving to serve.

Notes

Serve your roast beef sliced with creamy mashed potatoes and fresh vegetables. Add rich gravy or light au jus to enhance the flavors. Leftovers can be used for sandwiches.
