  • 1 6 to 7 pound bone-in prime rib roast
  • 2 tablespoons kosher salt
  • 1 tablespoon freshly ground black pepper
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh thyme
  • 4 cloves garlic (minced)
  • 1/4 cup olive oil

Preparation

  • Remove the prime rib roast from the refrigerator and let it sit at room temperature for about an hour.
  • Preheat the oven to 500 degrees Fahrenheit.
  • In a small bowl, mix together the salt, pepper, rosemary, thyme, garlic, and olive oil to create a paste.
  • Rub the paste all over the prime rib roast, making sure to get it into all of the crevices.
  • Place the prime rib roast on a rack in a roasting pan, with the fat side facing up.

Cooking

  • Roast the prime rib in the preheated oven for 15 minutes.
  • Reduce the heat to 325 degrees Fahrenheit and continue to cook until the internal temperature of the roast reaches 120-125 degrees Fahrenheit for medium-rare or 130-135 degrees Fahrenheit for medium.
  • Remove the roast from the oven and tent the roast loosely with aluminum foil. Let it rest for 30 minutes.

Serving

  • Slice the prime rib roast against the grain in 1/4 to 1/2 inch slices, and serve with your favorite sides.

Notes

Let the roast sit at room temperature before cooking to ensure even cooking. Use a meat thermometer to check the internal temperature for perfect doneness. Rest the roast after cooking to keep it juicy. Feel free to experiment with different herbs based on your taste preferences.
