Main Ingredients

  • 4 large egg whites At room temperature
  • 1 cup superfine sugar Or granulated sugar pulsed in a blender
  • 1/4 teaspoon cream of tartar Or substitute with 1/2 teaspoon lemon juice or vinegar
  • pinch salt
  • Red gel food coloring
  • Blue gel food coloring

Instructions
 

Preparation

  • Preheat the oven to 200°F (93°C) and line two baking sheets with parchment paper.
  • Use a clean, dry metal or glass mixing bowl. Wipe the bowl with vinegar to ensure it’s grease-free.
  • Add egg whites, cream of tartar, and a pinch of salt to the bowl. Beat on medium speed until soft peaks form.
  • Slowly add sugar, one tablespoon at a time, beating well after each addition until glossy stiff peaks form.

Piping and Baking

  • Using a paintbrush, paint red and blue gel food coloring inside a piping bag fitted with a large star tip.
  • Spoon the meringue into the piping bag, avoiding smudging the colored stripes.
  • Pipe small swirls onto the prepared baking sheets, spacing them about one inch apart.
  • Bake for 1 hour and 15 minutes without opening the oven.
  • Turn off the oven and let the meringues cool inside for 1 hour.
  • Once cooled, carefully remove them from the parchment and store in an airtight container.

Notes

Meringues store best at room temperature in an airtight container and can be frozen for up to a month.
