Main Ingredients

  • 1 roast Prime rib roast Size to suit your gathering
  • 2 tablespoons Salt To taste
  • 1 tablespoon Black pepper To taste
  • 1 tablespoon Garlic powder
  • 1 tablespoon Onion powder
  • 2 tablespoons Olive oil For rubbing
  • Optional Fresh rosemary or thyme Add for extra flavor

Instructions
 

Preparation

  • Preheat your oven to 450°F (232°C).
  • In a small bowl, mix salt, black pepper, garlic powder, and onion powder.
  • Rub the prime rib roast with olive oil, then season it generously with the spice mix. Make sure to coat all sides.

Cooking

  • Place the roast in a roasting pan, fat side up.
  • Roast in the preheated oven for 20 minutes.
  • Lower the oven temperature to 325°F (163°C) and continue roasting for about 15-20 minutes per pound, or until the thermometer registers 130°F (54°C) for medium-rare.
  • Remove from the oven and let it rest for at least 15-20 minutes before slicing.

Notes

Serve with garlic mashed potatoes and roasted vegetables. Slice against the grain for tenderness. Allow the meat to come to room temperature before cooking for even cooking.
