  • 1 whole whole turkey (12-14 lbs)
  • 1 cup unsalted herb butter (softened)

Herbs and Seasoning

  • 2 tablespoons fresh thyme (chopped)
  • 2 tablespoons fresh sage (chopped)
  • 4 cloves garlic (minced)
  • to taste Salt and pepper

Additional Ingredients

  • 1 onion onion (quartered)
  • 2 cups low-sodium chicken broth
  • Fresh herbs for garnish (optional) Recommended for serving.

Instructions

Preparation

  • Preheat your oven to 325°F (165°C).
  • In a bowl, blend the softened herb butter with chopped herbs, garlic, salt, and pepper.
  • Pat the turkey dry with paper towels and carefully loosen the skin over the breast.
  • Rub a generous amount of the herb butter mixture under the skin and all over the turkey.
  • Place the quartered onion inside the cavity of the turkey.
  • Pour the chicken broth into the roasting pan.

Cooking

  • Roast the turkey in the preheated oven, basting occasionally with the pan juices, until the internal temperature reaches 165°F (74°C), about 3-4 hours.
  • Let the turkey rest for at least 20 minutes before carving.

Serving

  • Serve the turkey as the main dish on a large platter, garnished with fresh herbs if desired.

Notes

Use a meat thermometer to ensure the turkey cooks through to 165°F (74°C) for safety. For extra flavor, let the herb butter sit for a while to infuse the flavors before using. Basting the turkey every 30-45 minutes will help create a golden, crispy skin. Store leftovers in an airtight container in the fridge and consume within 3-4 days.
