Ingredients
  

Main ingredients

  • 12 oz penne or rotini pasta Any similar pasta shape can be used.
  • 1 tbsp olive oil
  • 14 oz kielbasa sausage, sliced Can substitute with chicken or turkey sausage.
  • 3 cloves garlic, minced
  • 1 small onion, chopped
  • 2 cups chicken broth (low sodium)
  • 1 cup heavy cream For a lighter version, use half-and-half.
  • 3/4 cup grated Parmesan cheese Can mix with other cheeses.
  • 1 1/2 cups shredded cheddar or mozzarella cheese
  • Salt and pepper to taste
  • 1/2 tsp smoked paprika (optional) Can omit or adjust according to preference.
  • Fresh parsley (for garnish)

Optional add-ins

  • spinach Add during the last few minutes of cooking.

  • bell peppers
  • red pepper flakes For added spice.

Preparation

  • In a large pot, heat the olive oil over medium heat. Add the sliced kielbasa and cook for 4–5 minutes until it's nicely browned.
  • Add in the minced garlic and chopped onion. Sauté these for about 2 minutes until they're fragrant and the onion becomes translucent.
  • Pour in the chicken broth and heavy cream, bringing the mixture to a light simmer.
  • Add the pasta into the pot, then stir everything together. Cover with a lid and simmer for 10–12 minutes, stirring occasionally, until the pasta reaches an al dente consistency.
  • Once the pasta is cooked, stir in the Parmesan cheese until it melts into a creamy sauce. Add the cheddar or mozzarella cheese and stir until it’s perfectly gooey.
  • Season your dish with salt, pepper, and smoked paprika if using.
  • Garnish with freshly chopped parsley before serving hot. Top with additional grated Parmesan if desired.

Notes

Store leftovers in the fridge for up to 3 days or freeze for up to 2 months. Reheat with a splash of chicken broth or cream to maintain creaminess.
