  • 2 cups whole milk
  • 1.5 cups water or broth Broth adds flavor.
  • 8 oz pasta of your choice
  • 8-10 oz broccoli, finely chopped
  • 2 cups shredded extra sharp cheddar cheese
  • 1/4 cup plain Greek-style yogurt
  • 1 tbsp butter or ghee Optional for added creaminess.

Preparation

  • In a large pot, combine the whole milk and water or broth. Bring to a boil.
  • Once boiling, stir in the pasta. Lower the heat and let it simmer for 10 minutes.
  • Add the finely chopped broccoli and continue cooking for an additional 2-3 minutes, or until both the pasta and broccoli reach your desired tenderness.
  • Remove from heat and mix in the shredded cheddar cheese, Greek yogurt, and butter or ghee, if using. Stir until the cheese is beautifully melted and everything is creamy.

Notes

For a richer flavor, experiment with different types of cheese like Gruyère. Use pre-chopped or frozen broccoli for convenience. Store leftovers in airtight containers.
