Ingredients
  

  • 6 bone-in chicken thighs
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/4 tsp turmeric
  • 1 cup frozen peas
  • salt and pepper to taste
  • fresh parsley for garnish

Instructions
 

  • Brown chicken thighs in olive oil until golden, then remove.
  • Sauté onion and garlic until fragrant.
  • Stir in rice and spices; toast for 1 minute.
  • Add broth, nestle chicken, and simmer 25–30 minutes until rice is tender.
  • Stir in peas, fluff rice, and garnish with parsley.

Notes

You can use brown rice, but increase liquid and cook time. Perfect make-ahead dinner idea!
