Ingredients
  

  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 1 lb cooked shredded chicken
  • 4 cups chicken broth
  • 1 cup milk
  • 1 cup half-and-half
  • 1 pkg potato gnocchi (16 oz)
  • 1 cup fresh spinach
  • 1 tsp dried thyme
  • 1/2 tsp dried basil
  • salt and pepper to taste

Instructions
 

  • Sauté onion, carrots, celery, and garlic in oil and butter.
  • Add chicken, broth, and herbs; simmer 10 minutes.
  • Stir in milk and cream; do not boil.
  • Add gnocchi and cook 3–5 minutes until tender.
  • Stir in spinach, season, and serve.

Notes

Add more broth for thinner soup. For crockpot version, add dairy and gnocchi at the end of cooking.
