  • 3 medium extra ripe bananas (mashed, about 1 1/4 to 1 1/2 cups) Aim for bananas that are mostly brown for more sweetness.
  • 1 cup white granulated sugar
  • 1/3 cup canola oil You can substitute with vegetable oil or melted butter.
  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract
  • 1 1/3 cups all-purpose flour (sifted)
  • 1 tsp baking soda
  • 1/2 tsp salt

Preparation

  • Preheat your oven to 350°F (175°C). Spray a 9×5 loaf pan with nonstick spray and line the bottom and two sides with parchment paper.
  • In a large bowl, add your 3 extra ripe bananas and use a fork to mash them well.
  • Stir in 1 cup of sugar until well combined.
  • Add in 2 large, room temperature eggs, 1 tsp vanilla extract, and 1/3 cup canola oil. Mix everything together until smooth.
  • Sift together 1 1/3 cups all-purpose flour, 1 tsp baking soda, and 1/2 tsp salt. Gently fold the dry ingredients into the banana mixture until just combined.
  • Pour the batter into your prepared loaf pan and smooth the top.

Baking

  • Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow it to cool completely before removing from the pan.

Notes

Wrap tightly in plastic wrap to maintain moisture. Room temperature storage lasts up to three days, while refrigerator storage lasts up to a week. For longer storage, slice and freeze for up to three months.
