  • 1/2 teaspoon Crushed Red Pepper Flakes Adjust according to heat preference.
  • 1 teaspoon Dried Basil Fresh basil is excellent for a stronger aroma.
  • 2-3 pounds Mussels Ensure they are fresh, cleaned, and de-bearded.
  • 1 can Petite Diced Tomatoes 28-ounce; you can substitute fresh tomatoes if preferred.
  • 1/2 cup White Wine Add essential flavor; substitute with vegetable broth if desired.
  • 1/4 cup Fresh Parsley Chopped; sprinkle just before serving.

  • Heat the olive oil in a large pot over medium heat.
  • Add the minced garlic and chopped sweet onion, sautéing until they become fragrant and the onion is translucent—about 3-4 minutes.
  • Stir in the crushed red pepper flakes and dried basil, letting them toast for another minute.
  • Pour in the canned diced tomatoes and white wine, bringing the mixture to a gentle simmer.
  • Add the fresh, cleaned mussels to the pot. Cover and cook for about 5-7 minutes or until the mussels have opened up.
  • Discard any mussels that do not open, then gently toss in the freshly chopped parsley before serving.

Notes

Serve over al dente pasta or with crusty bread. For leftovers, store in an airtight container in the refrigerator and eat within 1-2 days.
