  • 1 lb beef tenderloin
  • 1 sheet puff pastry
  • 1 cup mushrooms, finely chopped
  • 1 none shallot, minced
  • 2 cloves garlic, minced
  • 2 tbsp Dijon mustard
  • 1 none egg, beaten for egg wash
  • to taste none Salt and pepper
  • for cooking none Olive oil

Preparation

  • Preheat your oven to 400°F (200°C).
  • Heat olive oil in a pan over medium heat. Sauté the chopped mushrooms, shallots, and garlic until they are cooked down. Let the mixture cool.
  • Season the beef tenderloin generously with salt and pepper. Sear it in a hot pan until brown on all sides, then remove it from heat. Allow it to cool, then brush it with Dijon mustard.
  • Roll out the puff pastry on a floured surface and cut it into squares that are about 4 inches on each side.
  • Place a spoonful of the mushroom mixture and a piece of seasoned beef in the center of each square.
  • Fold the pastry over the filling and seal the edges tightly. Brush each pastry with beaten egg for a golden finish.
  • Bake for 20-25 minutes, or until the pastry is golden brown. Serve warm.

Notes

Store leftover bites in an airtight container in the fridge for up to 3 days. For longer storage, freeze before baking and bake when ready to enjoy. Reheat in the oven to maintain flaky texture.
