Preparation

  • Begin by hard boiling the eggs. Place them in a pot filled with water, bring it to a boil, then cover and remove from heat. Allow them to sit for 12 minutes.
  • While the eggs are cooking, crisp the bacon over medium heat in a skillet. Once done, remove and crumble into small pieces.
  • Transfer the hard-boiled eggs into ice water to cool. After a few minutes, peel them.
  • Cut each egg in half lengthwise and carefully scoop out the yolks into a mixing bowl.
  • Mash the yolks until smooth, then combine with mayonnaise, Dijon mustard, salt, and pepper.
  • Gently fold in about half of the crumbled bacon.
  • Stuff the egg white halves generously with the yolk mixture.
  • Garnish with the remaining bacon crumbles and a sprinkle of chives.
  • Serve and enjoy your luxurious treat!

Notes

Store any leftovers in an airtight container in the refrigerator for 2-3 days. Best enjoyed chilled.
