Ingredients
  

Steak & Marinade

  • 1 lb sirloin steak (about 1-inch thick)
  • 3 tbsp olive oil
  • 2 cloves garlic (minced)
  • 1 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp salt
  • ¼ tsp black pepper

Grains & Fillings

  • 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
  • 1 cup roasted chickpeas (optional for paleo or keto) Optional
  • 1 cup cherry tomatoes (halved)
  • 1 whole cucumber (diced)
  • ½ whole red onion (thinly sliced)
  • ½ cup kalamata olives (pitted)
  • cup feta cheese (crumbled; optional for dairy-free) Optional
  • ¼ cup fresh herbs (parsley or dill, chopped)

Tzatziki Sauce

  • 1 cup Greek yogurt (plain; coconut yogurt for dairy-free)
  • ½ whole cucumber (grated, squeezed dry)
  • 1 tbsp fresh lemon juice (plus more to taste)
  • 1 clove garlic (minced)
  • 1 tbsp fresh dill (chopped)
  • to taste salt & pepper

Vinaigrette

  • 3 tbsp olive oil
  • 2 tbsp lemon juice (fresh)
  • 1 tsp honey (omit for Whole30) Optional
  • 1 clove garlic (minced)
  • ½ tsp dried oregano
  • to taste salt & pepper

Instructions
 

Marination

  • Mix the marinade ingredients (olive oil, garlic, lemon juice, oregano, thyme, salt, and pepper) in a bowl. Coat the sirloin steak in the marinade and let it sit for 30 minutes to 4 hours.

Prepare the Tzatziki

  • In another bowl, combine the tzatziki ingredients (Greek yogurt, grated cucumber, lemon juice, garlic, dill, and seasoning). Chill in the fridge.

Make the Vinaigrette

  • Whisk together the vinaigrette ingredients and set aside.

Cook the Steak

  • Heat a skillet over medium-high heat. Sear the marinated steak for 4–5 minutes on each side or until it reaches your desired doneness. Let it rest for a few minutes, then slice thinly.

Assemble the Bowl

  • Layer your cooked grains, sliced steak, and toppings in a bowl. Top with tzatziki and drizzle with vinaigrette before serving.

Notes

Keep leftovers in an airtight container in the fridge for up to 3 days. For freezing, separate grains, steak, and toppings into different containers. Steak can be frozen for up to 2 months but is best when fresh. Warm steak and grains before serving and enjoy tzatziki cold.
