Ingredients
  

Dips

  • 1/2 cup hummus
  • 1/2 cup tzatziki sauce

Vegetables and Fruits

  • 1/2 cup roasted red peppers, sliced
  • 1/2 cup marinated artichoke hearts
  • 1/4 cup Kalamata olives
  • 1 cup cucumber slices
  • 1 cup cherry tomatoes

Accompaniments

  • 4 pieces whole wheat pita breads, cut into wedges
  • 2 tbsp extra virgin olive oil For drizzling over the platter
  • Fresh parsley, chopped for garnish

Optional Ingredients

  • 1/4 cup feta cheese, crumbled Can be replaced with goat cheese

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Spread the pita wedges on a baking tray and warm them in the oven for 5 minutes.
  • While the pita warms, place both the hummus and tzatziki into small serving bowls.
  • Arrange the roasted red peppers, artichokes, olives, feta, cucumber slices, and cherry tomatoes around the dips.
  • Drizzle a little extra virgin olive oil over the entire platter and sprinkle with fresh parsley.
  • Serve immediately with your warm pita wedges.

Notes

Store leftovers in airtight containers in the refrigerator. Keep pita in a paper bag to maintain texture. Serve dips at room temperature.
