Cheeses

  • ½ cup shredded mozzarella cheese or feta for a Mediterranean touch

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Lightly grease a 9x13-inch baking dish with a touch of olive oil.
  • In a large bowl, combine the chicken, zucchini, cherry tomatoes, red onion, and minced garlic.
  • Drizzle with olive oil and sprinkle the oregano, basil, smoked paprika, salt, black pepper, and red pepper flakes (if using) over the mixture.
  • Toss everything together until thoroughly coated with the oil and seasonings.
  • Spread this vibrant chicken and vegetable mix evenly in the prepared baking dish.
  • Generously sprinkle both the mozzarella and Parmesan cheese over the top.

Baking

  • Cover the dish with foil and bake for 20 minutes.
  • Remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is golden, bubbly, and the chicken has reached an internal temperature of 165°F (75°C).
  • Garnish with fresh parsley and serve warm.
