  • 2 cups prepared mashed potatoes
  • 1 cup shredded sharp cheddar cheese
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper

Preparation

  • Gather everything in one place for easy access. If you’re using fresh potatoes, boil them until fork-tender, then mash with a bit of butter and cream for creaminess. If you have leftovers, simply reheat them until warm.

Mix It Up

  • In a large bowl, combine your warm mashed potatoes with shredded cheddar cheese, eggs, flour, salt, and pepper. Stir until everything is well incorporated.

Shape the Puffs

  • Scoop out the mixture in portions roughly the size of golf balls.

Cooking Time

  • Preheat your oven to 375°F (190°C), or heat oil in a deep fryer. Bake for about 20-25 minutes or fry until they’re beautifully golden brown and crispy.

Notes

Store cooled puffs in an airtight container in the fridge for up to 3 days. Reheat in the oven at 350°F (175°C) for about 10 minutes. You can also freeze them after cooling completely.
