Ingredients

Meats

  • 1 pound bulk breakfast sausage Feel free to mix and match with bacon or ham.
  • 8 slices bacon, diced Adds that irresistible smoky crunch.

Egg and Milk Mixture

  • 10 large eggs Creates a fluffy, custardy texture.
  • 1.5 cups milk Whole milk gives the richest custard; 2% works fine.
  • 1 tablespoon Dijon mustard Adds subtle tang.
  • 1 teaspoon salt Enhances savory notes.
  • 0.5 teaspoon coarse ground black pepper For a gentle kick.

Casserole Base

  • 20 ounces shredded potatoes/hash browns Thawed frozen hash browns are convenient.
  • 8 ounces cheddar cheese, grated Sharp or mild to taste.
  • 0.25 cup green onions, sliced Adds a pop of freshness and color.

Instructions

Preparation

  • In a large skillet over medium-high heat, crumble and brown the sausage until no pink remains. Transfer to a paper-towel-lined plate to drain excess fat.
  • In the same skillet, cook the diced bacon until crisp. Drain on paper towels.
  • In a large bowl, whisk together the eggs, milk, Dijon mustard, salt, and black pepper until frothy.
  • In another large bowl, combine the shredded potatoes, cooked sausage, cooked bacon, grated cheddar, and sliced green onions. Stir to distribute evenly.

Assembly & Baking

  • Grease a 9x13-inch baking dish and spread the potato-meat-cheese mixture evenly in the dish.
  • Pour the egg mixture over the top, pressing gently so the eggs soak in. Cover tightly and refrigerate for at least 2 hours or overnight.
  • Preheat the oven to 350°F (175°C). Remove dish from fridge and let sit for 10-15 minutes.
  • Bake uncovered for 45-55 minutes, or until the center is set and a knife inserted comes out clean.
  • Let the casserole rest for 10 minutes before slicing and serving.

Notes

Serve warm, and top portions with sliced avocado, salsa, or hot sauce. Pair with fresh fruit or a salad for complete brunch. Leftovers can be refrigerated for 3-4 days.
