Preparation

  • In a medium bowl, combine the softened cream cheese, minced garlic, chopped parsley, shredded chicken, shredded mozzarella, and shredded cheddar. Season with salt and freshly ground black pepper, then fold until evenly combined and creamy.
  • Fold in the baby spinach if using. Check the seasoning and texture; add a splash of lemon juice or a teaspoon of olive oil if the filling feels too stiff.

Assembly

  • Lay a low-carb tortilla flat and spoon about 1/2 to 3/4 cup of the filling near the center. Spread slightly, fold the sides in, then roll tightly to enclose the filling.

Cooking
