Ingredients
  

  • 4 large Russet or Yukon Gold potatoes peeled and diced
  • 6 slices of bacon diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1/4 cup butter
  • 1/4 cup flour
  • 4 cups milk
  • 2 cups chicken or vegetable broth
  • 2 cups sharp cheddar cheese shredded
  • Salt and pepper to taste
  • Green onions chopped, for garnish
  • Sour cream for serving

Instructions
 

  • In a large pot, cook the bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
  • Add the diced onion and garlic to the pot, cooking until softened.
  • Stir in the butter and allow it to melt, then whisk in the flour to create a roux.
  • Slowly add in the milk and broth, whisking constantly until the mixture thickens.
  • Add the diced potatoes and simmer until fork-tender.
  • Stir in the cheese until melted and creamy. Season with salt and pepper.
  • Top with crispy bacon, green onions, and a dollop of sour cream before serving.

Notes

For a gluten-free option, substitute flour with cornstarch mixed with water. You can use dairy alternatives for a vegetarian version.
