Ingredients
  

For the Cookie Dough

  • 1 cup unsalted butter, softened Ensure butter is softened but not melted for the best texture.
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Can use gluten-free flour blend as a substitute.
  • 1 cup almond flour
  • 1/2 teaspoon salt

For Filling and Dusting

  • 1 cup raspberry jam Use high-quality raspberry jam for a delicious filling.
  • Powdered sugar for dusting Dust cookies before serving.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
  • Add in the vanilla extract and mix well.
  • Slowly add the all-purpose flour, almond flour, and salt, mixing until combined to form a dough.
  • Roll out the dough on a floured surface to about 1/4 inch thick.
  • Use cookie cutters to cut out shapes, making sure to create cutouts in half of the cookies.
  • Place the cookies on a baking sheet lined with parchment paper.

Baking

  • Bake in the preheated oven for 10-12 minutes or until lightly golden.
  • Allow cookies to cool completely.

Assembly

  • Spread raspberry jam on the bottom of the whole cookies and top with the cutout cookies.
  • Dust with powdered sugar before serving.

Notes

Linzer cookies are best served fresh but also make great treats for gatherings. They pair well with tea or coffee. To store them, place in an airtight container at room temperature for about a week or freeze, separated with parchment paper.
