  • 2 tablespoons lime juice Can substitute with lemon juice if necessary.

Dry Ingredients

  • 3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Finishing Touch

  • 1/4 cup powdered sugar For dusting on top of cookies.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the eggs one at a time until fully incorporated.
  • Stir in the lime zest and lime juice.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually add the dry mixture to the wet ingredients, mixing just until combined.
  • Drop spoonfuls of cookie dough onto a baking sheet lined with parchment paper.
  • Bake for 10-12 minutes or until the edges are slightly golden.
  • Allow to cool slightly, then dust with powdered sugar.
