  • 1 lb thinly sliced ribeye or sirloin beef You can substitute ribeye with sirloin for a leaner option.
  • 8 oz provolone cheese, sliced Mozzarella can be used as an alternative if provolone is unavailable.
  • 1 cup mixed bell peppers, chopped
  • 1 medium sweet onion, chopped
  • 2 tbsp extra virgin olive oil
  • 4 low-carb tortillas

Preparation

  • Slice the beef into thin strips and chop the bell peppers and onion.

Cooking

  • Heat the olive oil in a skillet over medium heat. Sauté the onions and bell peppers until they soften, about 5-7 minutes.
  • Increase the heat to medium-high and add the sliced beef. Season with salt and pepper to taste, cooking until browned, about 3-5 minutes.
  • Once the meat is cooked, reduce the heat to low and place the provolone slices over the beef mixture. Let it melt completely.
  • Spoon the delicious beef and cheese mixture onto each tortilla. Roll them tightly.
  • Place the roll-ups seam-side down back into the skillet and cook until golden brown on all sides, which should take about 3-4 minutes total.

Notes

These roll ups pair great with a fresh salad or sautéed greens. A dash of hot sauce or creamy ranch dressing can enhance the flavor.
