Ingredients
  

  • 1 1/2 lbs chicken breasts or thighs boneless, skinless
  • 2 cups mushrooms sliced
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 2 oz cream cheese
  • 1/3 cup Parmesan cheese grated
  • 1/2 cup mozzarella optional topping
  • 2 tbsp olive oil or butter
  • 1 cup spinach optional
  • to taste salt and pepper

Instructions
 

  • Preheat oven to 400°F (200°C). Grease a casserole dish.
  • Brown chicken in oil for 3–4 min per side; remove and set aside.
  • Sauté mushrooms and garlic in butter until golden.
  • Add cream, cream cheese, and Parmesan. Whisk until creamy.
  • Layer chicken, mushrooms, and sauce in dish. Top with mozzarella.
  • Bake 20–25 minutes until bubbly and golden.
