Ingredients
  

  • 1.5 lb ground beef (80/20)
  • 1 tbsp olive oil or butter
  • 0.5 medium onion, diced
  • 2 cloves garlic, minced
  • 3 oz cream cheese, softened
  • 3 eggs
  • 0.5 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 2 tbsp tomato paste or low-carb ketchup
  • 1 tbsp mustard (optional)
  • salt & black pepper, to taste
  • chopped parsley or pickles, for topping

Instructions
 

  • Preheat oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  • In a large skillet, heat olive oil and cook ground beef, onion, and garlic until beef is browned.
  • Stir in tomato paste, mustard, salt, and pepper. Remove from heat.
  • In a bowl, whisk eggs, heavy cream, and cream cheese until smooth.
  • Spread beef mixture evenly in dish. Pour egg mixture on top and sprinkle cheddar cheese.
  • Bake uncovered for 20–25 minutes until bubbly and golden. Rest 5 minutes before serving.

Notes

Top with bacon and pickles for a 'Big Mac' twist. Great for keto meal prep or freezing. Reheat in oven or microwave as needed.
