Ingredients
  

  • 4 slices bacon, chopped
  • 1 tbsp butter
  • 1 small onion, diced
  • 3 jalapeños, diced and seeded
  • 3 cloves garlic, minced
  • 3 cups chicken broth
  • 8 oz cream cheese, softened
  • 1 cup milk
  • 1/2 cup half-and-half
  • 1 1/2 cups cheddar cheese, shredded
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp green onions, chopped

Instructions
 

  • Cook bacon until crisp; set aside.
  • Sauté onion, jalapeños, and garlic in butter.
  • Add broth and cream cheese; stir until melted.
  • Add milk, cream, cheese, and seasonings; simmer gently.
  • Top with bacon and green onions to serve.

Notes

Use fresh jalapeños for the best flavor. For mild soup, remove all seeds. Add chicken for extra protein.
